Why not the kitchen cupboards / units to go all the way to the roof?

I'm looking to change my kitchen (and bathroom, and gutters and windows!) and can not seem to find any kitchen cabinets ranges go all the way to the ceiling. This has always seemed totally wasted space, and her husband and I have always said that we want all the way to cuboards increasingly accepted that change. Any idea of any makes that do this? Am in northern Scotland. We should have a decent sized budget, but I think that might extend the custom built units. Any project managers in Moray are more than welcome to contact though!
